Frugal food

Last night was stir-fry using the leftover rice and a bag of broccoli, cauliflower, carrots mix. To accomodate SO's taste for meat, I cut up my last piece of lemon pepper chicken and threw that in there along with a couple of leftover roasted veggies from Monday. We then threw in some soy sauce, duck sauce packets from previous chinese take-out nights, and scrambled two eggs in the middle to mix in.

It. Was. Delicious!!!

That was the first time I've ever just completely made it up and it worked perfectly. Tonight is also leftovers, so I get to relax a little.

Plus, my lunch today is free Smile

    Yes, some delicious meals can be made with a little of this, a little of that. Lately we've been making vegetables cooked in chicken broth. I have a nearly empty jar of peanut butter and have stirred just a 1/4 teaspoon or so of peanut butter separately into my own bowl of veggies. Delicious, and suddenly tastes much richer, almost meaty.

    Stir-fry is so easy to wing it. It's really kind of hard to make it come out bad. I love how simple it is to make. I'll bet you make a lot more now that you know how great it will turn out!

    Thanks everyone! Hopefully, I can continue finding creative ways to use up the food we have and stretch our grocery budget.
